Traditionally made with topfen, the curd cheese of the Austrian Alps, liptauer is an essential element of the Styrian brettljause (the farmer’s snack plate). A substitute for the curd cheese is cream cheese, but then it would not be a genuine liptauer.
- 250 g topfen / cream cheese
- 100 g butter
- 45 g onions / shallots, chopped small (optional)
- 30 ml mustard / sour cream
- 1 tbsp mixed herbs, chopped small
- 1 tsp paprika powder
- 1 garlic clove, mashed
- 5 chives, chopped small
- Salt, pinch
Bring the butter up to room temperature, whip it into the cheese.
If using, add the onions or shallots at this stage.
Loosen the mixture with mustard or sour cream, season with garlic, herbs, paprika and salt.
Serve garnished with chives.
