When food imports compete with indigenous foods and the imaginations of clever cooks are allowed to run wild the result is food fusion. It is not new but it is now an accepted reality in many European countries.
These are the ideas we have collected during our travels. Number one is toasted pita bread with a bacon, cheese and sesame topping.
- 2 pita breads, sliced along length, lightly toasted, cooled
- 6 bacon rashers (thick), grilled whole, sliced into strips
- 12 Gouda cheese slices
- 60 g sesame seeds
Heat a grill. Place two slices of cheese on each piece of pita, heat until the cheese melts.
Remove from grill, place stips of bacon on top of the cheese, heat until the bacon starts to crisp at the edges.
Remove from the grill, spinkle the sesame seeds on top of the pita, heat until the seeds take on colour.
