Legendary Dishes | Halver Hahn (cheese, gherkin and mustard on rye)

Usually made with butter, Gouda cheese, mustard, onion rings, sour cucumber and paprika, this rye sandwich of Cologne street life has imposters! These are the theories behind the origins of this curious sandwich. It is a cheese roll! It is certainly not a chicken sandwich with meat from a rooster and anyone who gets confused is usually told a story.
This is the quantity for one!

  • 1 rye bread roll, halved
  • 120 g Gouda cheese slice
  • 1 (50 g) gherkin, sliced in half along length
  • 2 cherry tomatoes, quartered
  • 1 radish, sliced (optional)
  • 2 onion rings
  • 5 g butter (optional)
  • 1 tsp mustard
  • Paprika, pinch

If using spread butter on each half of bread. Coat each piece with a little mustard. Place the cheese on one piece of bread and the gerkin and onion on the other. Garnish with radish and tomatoes and a pinch of paprika.
