Condiments | Apfelmus (apple sauce)

  • 1.5 kg apples, peeled, cored, quartered – half cubed
  • 2 lemons, juice
  • 100 ml water
  • 90 g sugar
  • 50 ml apple juice
  • 2 x 12 cm long cassia sticks
  • 1 vanilla pod

Combine apple juice and water in a pot with the vanilla marrow and pod, sugar and cassia sticks. Bring gradually to the boil, add apple cubes and quarters, lemon juice and simmer for 15 minutes. Remove cassia sticks and vanilla pod. Blend half of the apple mixture, combine with the apple pieces, remove to jars.
