Legendary Dishes | Zivju Kukas (fish cakes)

  • 600 g fish fillets (from cod, hake, haddock, smoked haddock, salmon), minced small
  • 150 g onions, chopped small
  • 2 eggs
  • 75 g breadcrumbs
  • 45 g grits / polenta / manna croup
  • 45 g sour cream
  • 30 ml butter
  • 20 ml sunflower oil, for frying cakes
  • 15 g black pepper, freshly ground
  • Salt, large pinch

Sauté onions in butter over a medium heat for 15 minutes, leave to cool. Preheat oven to 180°C. Work the onions into the fish, combine with the eggs and grits, stir in the cream and seasonings. Shape into four 200 gram round flat cakes, dredge in breadcrumbs. Brown each side of each cake in oil in a frying pan over a medium heat, place on a greased baking tray, bake for 20 minutes. Serve with mashed potatoes and a mushroom sauce.
