Saithe, a fish of the Norwegian waters of the north Atlantic, is a popular ingredient in the range of Norwegian fish cakes.
- 700 g saithe fillets, chilled
- 350 ml cream / milk, cold
- 200 g onions, cold
- 30 g butter, cold
- 30 g potato flour, cold
- 5 g black pepper
- 1 tsp salt
Blend the milk, onions, potato flour and seasonings, pour into a jug. Blend the fillets in a food processor for just a moment. Pour the milk mixture into the blender. Run the blender for a few seconds. Shape into small cakes, fry in butter over a medium heat, about 10 minutes each side.
