Bela Krajina SLOVENIA cream of potato soup
1 litre water
500 g waxy potatoes, peeled, diced small
250 ml sour cream
30 g white wheat flour
20 g marjoram, chopped
Salt, for potato water
Cook potatoes in a large pot in salted water until they are tender. Remove four tablespoons of the potato liquid, allow to cool. Whisk flour into the liquid, add cream and pour mixture into pot, reheat slowly. Add all but a teaspoon of the marjoram. Cook for three minutes. Serve garnished with remaining marjoram.
