Each volume is themed, by category, by continent, by country, by region and by the food groups. The themes for volume 1 are seafood and spice, chicken is the featured meat, potato is the featured carbohydrate, raisin is the featured fruit, Ireland is the featured country, the Levant is the featured region and Europe is the featured continent.
Five continents (Africa, Asia, Europe, North America and South America) are featured in the series. Three countries from Africa and Asia are featured, two each from Europe, North America and South America. Each of the featured countries is a peripheral place, where the indigenous food is determined by the climate and by the ingenuity of those who forged its culinary traditions.
Africa is represented by Ethiopia and Tunisia, and a country to be decided.
Asia is represented by Azerbaijan and Vietnam, and a country to be decided.
Europe is represented by Finland and Ireland.
America – north, central and south – is represented by Chile, Jamaica and Venezuela, and a country to be decided.
The series should be defined by its emphasis on dishes made with indigenous ingredients that come from sustainable sources and in that context it is indifferent to the whims of those who would shape traditional foods to their own design. Every recipe is based on the traditional method with the ingredients that are seen as authentic

The Levant is the featured region and Europe is the featured continent.


Volume 2 features the traditional food of Ethiopia and introduces Finland. The themes for volume 2 are again seafood and spice, lamb is the featured meat, rice is the featured carbohydrate (the first of three appearances in the series), aubergine is the featured vegetable and apple is the featured fruit. The Rhône Valley is the featured region and Europe is again the featured continent.
